00:40 Preheat your oven to 450. Grease your baking pan with 1 tbsp butter.
00:50 Cut 10 tbsp of butter into 1/2 inch pieces and place them in your refrigerator.
02:27 In a bowl, mix together 3 1/2 cups all-purpose flour, 1 1/2 tsp baking soda, 1 1/2 tsp baking powder, 1 1/4 tsp kosher salt, 1 1/2 tsp sugar
07:17 Add your chilled butter to the mixture. Toss to coat the butter. Break up the butter into pea-sized pieces.
09:16 Add 1 2/3 cups cold buttermilk to the mixture.
12:41 Using a greased spatula, transfer the dough to your baking sheet.
13:20 Spread the dough and evenly distribute it in your baking pan.
15:30 Grease a knife (or spatula), Scour the dough into nine segments.
16:03 Bake for 30 minutes, rotating halfway through. The tops should be a deep brown when done.
