Protein Rich Peanut Curry

Описание:
1. Dry roasted Peanuts: 1/2cup Ground (paste)
2. Peanut oil or ghee: 1tbs
3. Dry roasted Fox nuts: 1/4 cup
4. Powder of dry roasted fox nuts: 1 tbs
5. Cumin seeds: 1tsp
6. Green chilli 1 finely chopped
7. Asafoetida (Heeng): pinch
8. Curry leaves: 7 to 8
9. Plain Yogurt: 1 cup (can be replaced with any vegan yogurt)
10. Water: as needed
11. Rock salt: to taste
Method
Dry roast the peanuts and remove the skin. Alternatively, use blanched peanuts, dry roast them, cool and blend to make a paste.
Heat oil/ghee and add asafoetida and cumin seeds and let it crackle.
Add curry leaves and chopped green chilli.
Add paste of roasted peanuts, stir well and cook for 2 minutes breaking the lumps if any.
Mix the yogurt and water and blend well and add to the above, slowly, little at a time and cook, stirring continuously.
Let it come to a boil and add powder of flax nuts, stir well and cook for another minute or so to bring to desired consistency
Add dry roasted fix nuts and rock salt to taste.
Bring to desired consistency
Serve hot with Varat chapati or Palao made with barnyard millets etc.

Peanuts: Peanuts do not belong to the nuts family, instead they are the same family as green peas, soybeans and lentils.

They have good amount of proteins, iron, iodine, Vitamin B1, Phosphorus, magnesium, calcium and potassium. Large amount of fibre helps to keep the excretory system healthy. It is good to manage cholesterol levels, blood pressure and helps with weight loss.
