Mushrooms (2 boxes white mushrooms)
Extra Virgin Olive Oil
Kosher Salt
Pepper
Shallots - 2, chopped
Parsley -2+ TB, chopped
Trim stems and cut large mushrooms into bite-sized pieces.
Heat 2T butter and 2T olive oil in pot.
Add mushrooms till they release liquid.
Keep cooking till liquid evaporates and mushrooms start to brown.
After the mushrooms have started to brown, add shallots.
When done to your taste, turn off heat and add fresh chopped parsley.
Serve!
