This noodle stir fry serves 4, is a complete meal with protein and veg, made from scratch in just 15 minutes – and it’s seriously tasty. I know there are faster noodle recipes out there…....but do they tick all those boxes?? :) - Nagi x

Fastest dinner-worthy noodle stir fry I know
400g / 14 oz chicken thighs, skinless boneless, thinly sliced (or breast)
500g / 1 lb hokkien noodles, lo mein, or other noodles – from the fridge, prepared per packet, rinsed well, drained
1 tbsp peanut oil (or any other neutral oil)
2 garlic cloves, finely minced
7 green onions, cut into 5 cm / 2″ lengths – soft dark green parts separated from the white/pale green firmer parts
5 cups green cabbage, sliced ~1 cm / 0.4″ thick
NOODLE STIR FRY SAUCE (just 2 ingredients!):
3 tbsp kecap manis (sweet soy)
1/4 cup fish sauce
OPTIONAL:
1 tbsp+ chilli crisp, chilli paste or sriracha – add, taste, repeat!
1. Toss chicken with 1 tbsp sauce.
2. In a large 30cm/12" non-stick pan over high heat, cook chicken first, adding garlic and white part of green onion towards the end.
3. Add cabbage, cook 1 1/2 minutes until starting to wilt. Then add noodles and half the sauce, toss 45 sec until sauce is no longer pooling in the pan (~45 sec) then add the rest of the sauce. Toss again until no sauce remains in the man, adding chilli crisp in towards the end (~ 1min). Add green part of green onion, toss to wilt. Serve!
