A dovetail neck joint is strung up, without glue, to check neck and top deflection before the final glue up.
A properly fit dovetail will hold itself in the neck block under full string tension, without any issues. Depending on the individual luthiers process, they may fit the neck and string the guitar to pitch multiple times during a neck reset to check the neck angle relative to top. This particular guitar had been strung up and played for over a week before this video was taken, giving the neck and top plenty of time to readjust to string tension. Off camera, Danny finished the repair by adding a small amount of hot hide glue to the dovetail, some white glue to the fingerboard extension, and clamping it all back together overnight.
