Ingredients:
4 lb boneless beef chuck roast, cut into pieces
salt and pepper
1 12 oz jar roasted red peppers, drained and rinsed
2 TBS tomato paste
1/3 cup sweet paprika, NOT smoked
1 TBS white vinegar
2 TBS oil
6 cups chopped onions
6 carrots, peeled and chopped (use more carrots if desired)
3 TBS flour
1 bay leaf
5 TBS water
1/2 cup sour cream
2 TBS fresh parsley, minced
