Hello there ! Welcome back to our channel. A quick and flavorful curry made with yogurt and roasted/fried papad (thin lentil crisps), popular in Rajasthani cuisine.
📝 Ingredients:
Papad (urad dal or moong dal) – 2 to 3 (roasted or lightly fried)
Curd/Yogurt – 1 cup (whisked)
Gram flour (besan) – 1 tsp (optional, helps prevent curd from curdling)
Water – ½ cup
Oil or ghee – 1 tbsp
Cumin seeds – ½ tsp
Asafoetida (hing) – a pinch
Green chili – 1 (finely chopped)
Turmeric powder – ¼ tsp
Red chili powder – ½ tsp
Coriander powder – 1 tsp
Salt – to taste
Fresh coriander – for garnish
🍳 Instructions:
Prepare the Papad:
Roast the papad directly on flame
Break them into medium-sized pieces and keep aside.
Prepare the Yogurt Mixture:
In a bowl, whisk yogurt with water and gram flour until smooth.
Add turmeric, red chili, and coriander powder. Mix well.
Tempering:
Heat oil/ghee in a pan.
Add cumin seeds, mustard seeds (if using), hing, green chili, and ginger.
Sauté for a few seconds till aromatic.
Make the Curry:
Lower the flame and slowly add the yogurt mixture, stirring continuously.
Cook on low flame for 4–5 minutes, stirring occasionally so the curd doesn't curdle.
Once it starts to boil lightly and thickens, add salt.
Add Papad:
Add the broken papad pieces into the curry.
Cook for another 1–2 minutes so the papad soaks a bit but doesn’t turn mushy.
Garnish and Serve:
Garnish with chopped coriander.
Serve hot with roti, paratha, or plain rice.
✅ Tips:
Use sour curd for more traditional flavor.
Frying papad adds more taste, but roasted version is healthier.
Add kasuri methi or garam masala for variation.
