Pumpkin Chocolate Chip Muffins

Makes 12 muffins or 24 mini muffins
Ingredients:
1 ½ cups flour (I like to use half whole wheat and half white flour)
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon pumpkin pie spice or cinnamon
½ teaspoon salt
⅓ cup canola oil (or avocado oil or similar)
⅓ cup buttermilk (or milk with 1 teaspoon vinegar or lemon juice added-let sit for 2 minutes)
½ cup sugar
1 egg
1 cup pumpkin puree
1/3 cup chocolate chips (I like to use the mini)
Nutrition Boost: Add in 1-2 tablespoons of ground flaxseed or hemp seeds to the dry ingredients.
Directions:
1. Combine the flour, baking soda, baking powder, salt and spices.
2. In a separate bowl, combine the oil, sugar , buttermilk, and egg. Mix dry and wet ingredients together. Fold in the pureed pumpkin to combine. Fold in the chocolate chips.
3. Bake at 350 for 14-16 minutes for mini muffins and 22-24 minutes for full size muffins.
Enjoy within 5 days or freeze for up to 3 months.
