HOW TO MAKE CHICKEN POT PIE STEP BY STEP // FILL YOUR FREEZER CHALLENGE / BATCH COOKING FROM SCRATCH
Welcome back to Contemporary Mama and another episode in my fill your freezer challenge series! I am sharing exactly how to make chicken pot pie step by step! This chicken pot pie freezer meal is one of my favorite freezer meals for busy nights. I love batch cooking freezer meals so I decided to make four of these freezer friendly chicken pot pie casseroles! These would make a great freezer meals for a new mom or family member going through a hard time. I have been perfecting this homemade chicken pot pie recipe over the last 10 years and I truly believe this classic chicken pot pie from scratch is one of the best freezer meals for busy moms. Freezer cooking for busy nights keeps you out of the drive thru when life gets crazy and I'd much rather have this ultimate chicken pot pie recipe waiting for me rather than some fast food. Contemporary Mama's Chicken Pot Pie!
2-3 chicken breasts
2 bay leaves
EVOO
1/2 lb mushrooms-sliced
3 carrots-diced
3 ribs celery-diced
3 shallots-diced
2 potatoes-chopped
salt & pepper
3 tbsp butter
3 tbsp flour
3 tbsp fresh thyme
1/2 cup white wine
1/3 cup cream
1/3 cup sharp white cheddar-shredded
1 cup chicken stock
2 tbsp dijon mustard
1 cup frozen peas
1 sheet pie dough or crescent rolls
1 egg lightly beaten
Bring large pot of water to a boil. Add chicken and bay leaves and seasonings of your chose. Cook chicken for 20 minutes then cool and dice into bite sized pieces. Heat olive oil in a large deep skillet over medium high heat. Add butter. When it foams add mushrooms and brown 7-8 minutes. Add thyme, carrots, celery, potatoes, garlic and shallots. Season with salt and pepper and cook, stirring occasionally, for 5-10 minutes. Spring flour over pan and cook for 1 minute. Add wine and reduce by half. Add stock and simmer to thicken for 5 minutes. Add dijon, cream, cheese, peas, and chicken and heat through. Transfer to casserole dish and top with dough. Trim excess if necessary. Cut a slit or two for steam to escape. When ready to bake brush with egg wash. Bake at 375 degrees for 45 min to 1 hour. May have to cover crust for part of the time if getting too browned.
