Fat content in breast milk provides around 50% of the energy necessary for newborns’ growth and development. 98% of fat in breastmilk is composed of triglycerides, which contain 3 fatty acids bound to a glycerol backbone. These fatty acids consist of SN1 and SN3 located in the external positions of the triglyceride, and SN2 at its center. Palmitic Acid is the main fatty acid found in human milk and 70% is esterified at the SN2 position.
