Val Ki Sabzi or Lima Beans Curry Recipe - A popular, easy to make Gujarati and Maharashtrian dish. Val ki sabzi or Lima beans have a unique taste. It is slightly bitter and that is what gives dal its flavor. The val provides you the much needed protein and iron. Generally, these beans are to be removed from its pod (Known as Papdi). the fresh beans are dried and available in the market as dried pulses. Here, I have made Val Ki Sabzi or Lima Beans Curry in a very easy way and cooked in the pressure cooker. Val Ki Sabzi is very popular dish as it is served with aamras (Mango Pulp) during Summer season. You can also have it with Roti, nan or steamed rice.
