Ingredients
Vegetables:
300g Kai-lan (Chinese broccoli)
3 cloves of garlic
Chicken:
750g chicken breast
20ml light soy sauce
White pepper
1 tablespoon cornstarch
Eggs:
5 whole eggs
Sauce:
40ml light soy sauce
40ml dark soy sauce
50g oyster sauce
16g white sugar
Noodles:
500g rice noodles
Oil:
Approximately 16ml for cooking
Instructions
Prep the Vegetables:
Cut the ends off 300g Kai-lan, then cut into thirds and slice the thicker ends into 1-inch pieces for even cooking. Place in a bowl and set aside.
Lightly smash, peel, slice, and dice 3 cloves of garlic. Place in a bowl and set aside.
Prep the Chicken:
Slightly flatten 750g chicken breast and cut into pieces approximately 5cm wide and 5mm thick strips.
Place the chicken in a bowl, cover with 20ml light soy sauce, a few shakes of white pepper, and 1 tablespoon cornstarch. Stir to evenly coat and set aside.
Prep the Eggs:
Crack 5 whole eggs into a bowl, whisk, and set aside.
Make the Sauce:
Combine 40ml light soy sauce, 40ml dark soy sauce, 50g oyster sauce, and 16g white sugar in a small bowl. Stir to combine and set aside.
Cooking:
Heat a large frying pan over high heat with approximately 4ml oil.
Add half the chicken and cook for 90 seconds on one side until colored, then flip and cook for another 60-90 seconds until almost cooked through. Set aside and repeat with the remaining chicken.
Rinse the pan, heat over medium with approximately 2ml oil, add the whisked eggs, cook for 30 seconds, move around the pan until just cooked, then remove. This should take about 60 seconds.
Place 500g rice noodles in a large bowl, cover with boiling water, and cook for 90-120 seconds. Drain and set aside.
Heat the same large pan over medium, add a little oil, add the partially cooked rice noodles and garlic, and fry for 60 seconds.
Add the Kai-lan and sauce, stir to combine, and fry for 3 minutes. Add the chicken and cook for another minute. Finally, add the eggs and stir to combine.
Portion the Meal Prep:
Evenly divide the Pad See Ew into 5 containers, ensuring all components are distributed evenly.
