Homemade Turkish Pita Bread for Kebabs, Tirnakli Pide

Tirnak pide or a.k.a. tirnakli pide is one of the most popular flatbreads often served with kebabs and traditional food in Turkey. Tirnakli pide takes its name from the notches on it, because these are made with fingertips, and "tirnak" means "finger nail" in Turkish.
Especially loved in the south and southeastern part of Anatolia, this flatbread is a must have if you love kebabs and other traditional Turkish and Middle Eastern food.
Tirnakli pide is usually served "under" the kebabs, such as legendary Adana kebab, Iskender kebab, to soak all the juices of the meat.

Ingredients:
Serves 5 - 6 Flatbreads
• Flour, 500 g (high protein bread flour)
• Water, 350 ml (about 1.5 cups)
• 5 g dry yeast
• 1 tsp salt (5 g)
Glazing - Option 1:
• 1 egg
• 3 tbsp yogurt
Glazing - Option 2 (Slurry, lactose free) :
• Flour, 50 g
• Water, 50 ml room temperature
• Water, 250 ml Boiled
Instructions:
1. Mix the yeast in the water and let it resolve
2. Gradually add the flour and mix until a dough forms
3. Knead for 1 – 2 minutes and add the salt
4. Continue kneading for 5 minutes until it’s smoother and elastic
5. Cover and let it rise and proof for 30 minutes at room temperature
6. Divide into 5 - 6 equal pieces and shape into dough balls (150 g - 180 g each)
7. Transfer the dough balls onto a floured tray
8. Cover with a damp cloth and let them rise for another 5 - 10 minutes at room temperature
9. Option 1: In a small bowl, mix and whisk the yogurt with 1 egg
10. Option 2: In a small bowl, mix and whisk 40 g flour with 50 ml room temp water
Add 250 ml boiling water and whisk until combined and slightly thickened
11. With your hands gently flatten the doughs into large eliptic flat bread shapes
12. Apply generous amount of one of the glazings on top of the dough balls
13. With your finger tips, make indentations on the top of the dough horizontally and vertically to make small square pillows
14. Transfer with a pizza peel or wooden bord into an oven at 250°C / 480°F
15. If your oven is able to reach higher temperatures, heat up to 300°C / 570°F
16. Bake for 8 - 10 minutes until golden brown at 250°C / 480°F or 5 - 6 minutes at 300°C / 570°F
