I have created this tart shell to simply avoid using pie weights, or beans or rice.
the delicious tart curd is an homage to Chef François Payard on his classic lemon tart.
TARTA
2 y 1/2 tza de harina
1 tza de mantequilla helada
1/2 tza de azucar de reposteria
5 cda de agua hela
1/2 cdta de sal
2 tsp de vainilla
1 yema de huevo
CURD DE MARACUYA
4 huevos
2 yemas de huevo
1 tza de azucar
1 tza de jugo de maracuya
1/2 tza de mantequilla
TART SHELL
2 & 1/2 cups of flour
1 cup of frozen butter
1/2 cup of icing sugar
5 tbsp of ice water
1/2 tsp of salt
1 tsp of vanilla
1 egg yolk
PASSION FRUIT CURD
4 eggs
2 egg yolks
1 cup of passion fruit pulp or concentrate
1/2 cup of butter
