This week, I’m diving into KBBQ Essentials! 🍖✨
I’ll be posting a full recipe every day to make your KBBQ experience even better. First up—Naturally Pink Pickled Radish Wraps (Ssam mu)! 🌸 These wraps get their gorgeous color from beets, and not only do they look beautiful, but they’re also packed with the health benefits of radish (digestion + immunity boost) and beets (boosts blood flow & reduces inflammation). 🍃💪
I personally can’t KBBQ without them 😋 Make sure to follow along and try this one for yourself 🫶
Ingredients:
1/2-3/4 large Korean radish (or daikon radish)
1/2 medium beet, peeled
1 small cup rice vinegar (about 150ml)
2 small cups water (about 150ml)
1 small cup sugar (about 150ml)
1/2 teaspoon salt
Instructions:
1. Prepare the Radish and Beet:
Peel the Korean radish (or daikon radish) and use a slicer to thinly slice it. Do the same with the beet to get thin, uniform slices.
Lay the beet slices at the bottom of a large container.
Add about half of the sliced radish on top of the beet layer, then add another layer of sliced radish in the middle, ensuring an even spread.
2. Make the Pickling Liquid:
In a saucepan, combine rice vinegar, water, sugar, and salt. Heat over medium heat, stirring occasionally until the sugar and salt dissolve completely.
Once dissolved, bring the liquid to a simmer and cook for 2-3 minutes. Remove from heat and allow to cool for 10-15 minutes.
Note: The small cup I used holds about 150ml. If you’re using a standard 240ml cup, adjust the quantities accordingly, but the 1:1:2 ratio (vinegar:sugar:water) will still apply.
3. Pickling the Radishes and Beets:
Pour the cooled pickling liquid over the radish and beet layers, ensuring the liquid covers the slices.
Cover the container and refrigerate for at least 2 hours, or ideally overnight, for the best flavor.
4. Serving:
After the radishes and beets have marinated, they’re ready to be used as wraps for your KBBQ! These naturally pink, tangy radish wraps add the perfect crunch and color to your meal.
