Here is one of my most favorite and beloved dishes which I made for Bank Holiday Easter weekend. The recipe can be found in my first cookery book, My Modern Indian Kitchen, but given recent circumstances, I wanted to share my favorite recipe with you all.
With a 48 hour marination, starting cooking off on BBQ, and total of 3 hours slow roasting, this dish is quite literally a labor of love. But I promise you, its worth it!
Okay, so it was an Easter bank holiday weekend which none of us could have imagined. Going back a few months or even a few weeks ago, who would have thought that we would ever be in this situation?
Amidst all this fear and crazy uncertainty, I am trying to remain as positive as possible. Don't get me wrong, I've had a few 'wobbly' days, (which is only natural I guess), but so far, its been a time of gratitude and reflection for me.
I'm thankful that my family and I have each other, and that we have our health. I'm thankful that we've been able to be together during this time. I'm thankful that we were able to celebrate Easter, whilst so many families all over the world couldn't.
