This Classic Adobo Marinade is inspired by the authentic Filipino adobo, bringing together soy sauce, vinegar, garlic, bay leaf, and peppercorns in a bold, deeply savory balance that defines this timeless dish. The marinade yields about 1 cup, enough for 1 to 1.5 kilograms of meat, and works beautifully with chicken, pork, beef, or even seafood. To use, add the meat and coat thoroughly, then cover and marinate according to protein type: chicken or pork for 4 to 12 hours, beef for 6 to 24 hours, and seafood for 30 to 60 minutes. The flavor can be adjusted by increasing garlic for intensity, sugar for balance, or vinegar for sharpness. Any unused marinade can be stored in a tight-fitting container in the refrigerator for up to 3 to 4 days.
▶ Recipe Ingredients ~
1/2 cup Soy Sauce
1/3 cup White Vinegar
5–6 cloves Garlic (minced)
1 tsp Whole Black Peppercorns (lightly crushed)
1/4 tsp Ground Bay Leaf
1 tbsp Brown Sugar
1 tbsp Neutral Oil
▶ Directions ~
In a bowl, combine soy sauce and vinegar.
Add garlic, peppercorns, ground bay leaf, brown sugar, oil, and ground black pepper.
Mix well until fully combined and sugar is dissolved.
Use as desired, or store any unused marinade in a tight-fitting container and refrigerate.
