Ammama's Secret Biriyani Recipe! 🍚👨🍳

Ingredients:
For Birista:
Onion - 5-6
Oil for frying
Salt - a pinch
Sugar - 1 tsp
For Chicken Marination:
Chicken - 1.5 kg with bone
Salt
Kashmiri chilli powder - 2 tbsp
Chilli powder - 2 tbsp
Turmeric powder - 1 tsp
For Rice:
Basmati rice - 5 cups / 1 kg
Whole masala:
Green cardamom - 5
Black cardamom - 2
Fennel seeds - 1 tsp
Black peppercorns - 1 tsp
Bay leaf - 2
Javitri - 2
Star anise - 3
Cloves - 6-8
Garlic cloves - 3
Lemon juice - 2 tbsp
Carrot - 1 chopped
For Chicken Masala:
Whole garam masala:
Green cardamom - 3
Black cardamom - 1
Bay leaf - 1
Fennel seeds - 1 tsp
Cloves - 5
Cinnamon stick - 1 inch
Star anise - 3
Black pepper - 1 tsp
Onion - 7-8 medium
Ginger - 1 inch chopped
Garlic - 10 cloves
Chilies - 3-4
Turmeric - 1 tsp
Chilli powder - 2 tbsp
Kashmiri chilli powder - 2 tbsp
Coriander powder - 3 tbsp
Tomato - 2 big
Dates - 3-4 pureed
Coriander leaves
For Dum:
Chopped pineapple - 1 cup
Saffron milk - 1 cup
Ghee - 3 tbsp
Garam masala - 1 tsp
Birista
Coriander and mint leaves - 1 cup
Fried cashew nuts and raisins - 1 cup
Method:
1. Birista: Finely slice the onions, add salt and sugar, mix it properly. Fry the onions in hot oil till golden brown. Keep it aside.
2. Marinate the chicken: Marinate the chicken with masalas and keep for min 1 hour.
3. Fry the chicken: Use the oil used for frying onions and fry the chicken pieces till it's 80% cooked.
4. Rice: Wash 5 cups of rice thoroughly and soak it for 15 mins. Strain and keep it. In a pot, add 10 cups of water. Put all the masalas in mortar and pestle and slightly crush it, add it to the water with salt. Let the water boil. In a biriyani pot, add ghee 2 tbsp, add the strained rice and fry for 5-6 mins. Add carrots to it. Once rice is little dry, strain and add the boiled water. Add salt if required. Cover and cook. Add lemon juice when rice is half done. Cook till water evaporates and rice is fluffy.
5. Chicken masala: In a kadai, add oil and all whole garam masalas. Saute till fragrant. Add chopped onion, garlic, ginger, and chilies and fry till brown. Add all the masalas and cook for 2 mins. Add tomatoes and 1/2 cup water and cook till oil separates. Add the fried chicken, mix it, and add dates puree. Cover and cook for few mins. Add coriander leaves.
6. For Dum: Apply ghee at the bottom of biriyani pot. Add a layer of rice. Put some birista, coriander & mint leaves, saffron milk, pineapple, and garam masala.. add a layer of chicken and repeat with rice and other things. Keep on low flame for 15 mins.
