Today Elliot is at Sake Labo in Singapore sipping on an amazing Kunimare Junmai Daiginjo,
Normally made with local Ginpu rice, this particular version is made from Yamada Nishiki rice.
The brewery that produces this sake was founded in 1882 and has roots in Niigata. Elliot describes the aroma of the sake as having hints of ripe apple, pear, and nashi (a type of Asian pear).
On the palate, he notes that it has a fresh, crisp, and clean taste reminiscent of Granny Smith apples. The acidity is refreshing and slightly salty, similar to the kimoto style of sake he had the previous night. Interesting that this style of sake, originating from Niigata, has made its way to Hokkaido, and he believes it reflects the inspiration from both regions.
