This is my cook with me vegan Sunday Lunch video: Smoky Jollof rice, Tofu (Wara) dodo, and Spinach stew
Here's the list of ingredients
Vegan Jollof rice (cook time: about 35 mins)
Pepper mix - 1 large tomato, 2 scotch bonnets, 2 large red bell peppers, half of a large green bell pepper, a hand full of spring onions, 1 medium onion, 1/2 a thumb of ginger.
3 cooking spoon full of oil
1 medium onion (diced)
4 tbs tomato paste
4 bay leaves
11/2 tsp curry powder
11/2 tsp thyme
11/2 tsp salt
1 tsp smoked paprika
1 small clove garlic
half a thumb of ginger
1 cup of water
2 cups of rice
foil to cover the rice
Garnish - 1tbs Vegan butter, Sliced onions
Marinade for the Tofu (Wara) (3 hours +)
14oz/397g Extra firm organic Tofu (I used ‘Nasoya’, the whole pack) - cubed
3 tbs oil
1/2 tsp salt
1/2tsp ginger powder
1/4 tsp black pepper
sliced onions
1/2 tsp curry
1/2 tsp thyme
Tofu (Wara) dodo
3 plantains (diced)
3 red bell peppers, 1 medium onion, 2 scotch bonnet(blended pepper mix)
1 medium green, red bell peppers (diced)
chopped spring onions for garnish
1/2 tsp thyme
3/4 tsp curry powder
1/2 tsp ginger
1/2 tsp garlic powder
1/2 - 3/4 tsp salt
1/4 cup water
Spinach stew
1/2 tsp ginger
1/2 tsp garlic
1/2 tsp curry
1/2 - 3/4 tsp salt
Tomatoes, red bell pepper, onions, scotch bonnets (diced)
Wood ear mushrooms (optional)
Chopped spinach
