Berry Crumb Cake
This cake is so tender and moist with a thick layer of jammy berries and a crunchy crumb topping.
I have used 50-50 ratio of blackberries and blueberries.You can use berries of choice.This cake gets even more moist a day after it is baked.No eggs as always!
Crumb Topping Recipe:
•45g (3 tablespoons )Butter ( melted )
•90g (3/4cup) All Purpose Flour
•55g (1/4cup) Light Brown Sugar
•1/8tsp Salt
Method
-In a mixing bowl combined all the ingredients, and mix with a fork until it is clumpy, no longer dry and the flour is absorbed.freeze the crumb topping until ready to use and store any unbaked topping in the freezer.
Berry Layer:🫐🫐
•150g (1 cup) Blueberry ( fresh or frozen)
•150g (1 cup + 1/4cup) blackberry (fresh or frozen)
•30g (2 tablespoons)Granulated sugar
•16g (2 tablespoon)All Purpose Flour
Method:
-In a bowl combine all the ingredients and toss it with a spoon until well combined. Set aside and prepare the cake batter.
Cake Recipe:
•275g (1 cup + 1/8cup) Plain Yogurt (unsweetened almond milk yogurt or any yogurt of choice)
•5ml (1 tsp) White Vinegar
•100g (1/2cup) Granulated Sugar
•50g (1/4cup)Light Brown Sugar
•80ml (1/3cup) Oil ( Any flavorless)
.•2 tsps Vanilla Extract
•190g (1 cup + 1/2cup) All Purpose Flour
•3/4tsp Baking Powder
•1/2tsp Baking Soda
•1/2tsp Cinnamon Powder
•1/4tsp Salt
Method:
-Preheat oven to 350f. Grease an 8 inch spring form pan with oil & line it with baking paper. In a bowl combine plain yogurt, light brown sugar, granulated sugar, oil & vanilla extract.
-Add all the dry ingredients into the liquid ingredients and mix lightly with a whisk. Pour this batter into the cake tin and the prepared berries and spread it an even layer top it cold crumb topping and bake until golden brown, 40-45 minutes it firm to touch and insert a tooth pick in the center of the cake to check if it is baked. Baking time will vary depending on the choice of berries. Frozen berries will typically take longer to cook through. Cool it down for 1 hour, place the cake on a serving plate. Dust some powdered sugar and enjoy! 🫐🫐🫐
