He's making a homemade pastrami sandwich totally from scratch using beef ribs. We start by curing the meat for two weeks to be safe and then we smoke it. Geech also whips up some simple coleslaw and his own Thousand Island dressing with a little honey in it. It takes a long time to get right, but the flavor is totally worth the wait.
