Curd Rice was originated in India. In this video, we have made a vegan version of curd rice using coconut yoghurt. It has tummy-pleasing probiotics that can help regulate digestive health, providing an ample dose of healthy bacteria to the gut. Perfect for the summers!

-Ingredients:
1/2 cup coconut yoghurt
1/2 tsp ground black pepper
1/2 tsp himalayan pink salt
1 tsp ground cumin powder
1tbsp washed and chopped coriander leaves
1 tbsp washed and chopped mint leaves
1 tbsp water
1/4 cup grated carrots
1/4 cup grated cucumber
-For Seasoning:
1 tbsp sesame oil
1/2 tsp mustard seeds
1/2 tsp split and de-husked black gram lentil
a few curry leaves
2 slit green chillies (optional)
