Stocks of quality wild sea urchins have been in decline for the last twenty years, but demand, particularly in North and South East Asia, is strong and growing. In Australia, with the increased focus on fine dining there is a small but growing demand for high quality sea urchin roe. The current supply/demand mismatch has created an opportunity for the aquaculture of sea urchins in Australia.
